Holly Jolly

Hey hey hey!

Good evening everyone! Tonight is the night that we stay up and wrap Christmas gifts to send out tomorrow to our family! It’s also the night we catch up on laundry, bake cookies, and last but not least watch 30 Rock! For the longest time Nate and I were obsessed with The Office, but let’s get serious: without Jim pursuing Pam and the drama there, it’s just not that great anymore. Plus, I love the weirdness that is 30 Rock.


Snack after my hour walk today: Oikos Honey Yogurt and some baby carrots! Perfect combo!


Tonight I’m baking off some cherry chocolate chip cookies and guess what? They didn’t fall flat! Emma’s recipe pulled through, and I am SO THRILLED! I’m also making some toffee shortbread (both for work, neither is healthy), so our house is filled with the smell of baked goods. Mmmmmmmmmmmm :)

Dinner tonight was on the fly, using up some stuff we had leftover in our freezer and pantry: Nate had Mango HabaƱero Tilapia and I had some herb crusted salmon, both with salad, garlic couscous (told ya I love my garlic!), and some red wine mushrooms for a little appetizer. Yummy! We’re both doing pretty well with the whole small-portion thing, which is great.


Sauteed Cremini mushrooms in 1 teaspoon of butter and about 1/4 cup of red wine.

This couscous is amazing. We had it for the first time on Tortola, so every time we have couscous it reminds us of that trip :)

Nate's plate with his tilapia and couscous. We cooked the fish with a sprinkle of salt over medium-low heat for about 2-3 minutes on each side, then poured the sauce below on it...sweet and hot!

I love love LOVE this sauce! Reminds me of Fredericksburg, Texas :)

Salad was mixed greens, carrots, red onion, feta cheese, and croutons. Forgot we had tomatoes until after we were done eating :( Just means more for tomorrow!

I must admit…tonight I drank some wine and actually liked it! I know, I know…wine is amazing and I can’t believe I don’t love it either, but in my defense I never drink much and would (most times) rather have a good, dark porter than anything else. However, tonight’s wine (Cabernet Sauvignon) was just right and it was great to drink a little while we were cooking.


I’m thinking I might throw an upper body lifting session in tonight before bed too, and do a nice long power yoga DVD in the morning.

What is your favorite (healthy) side dish for Christmas dinner? Looking for some great ideas for next week :)

  2. Glad to see someone else admit that they don't really like wine! I always feel like an uncultured freak, but really the only ones I can take are the light and fruity ones.
