It felt so nice to sleep in a little bit this morning! (Although sleeping in meant getting up at 8 rather than 6). It's so funny to think back on my college days when I slept in til 12 on Saturdays on a regular basis. Not from drinking and partying the night before, but simply because I was THAT TIRED. I feel so old now because I really can't sleep any later than 8 or else nothing will get done!
Anyway, this morning Salah left to drive back to the Dallas area, and on to New Orleans tomorrow. What a lucky girl! She gets to enjoy the delightful food of that area for the next couple of days. I totally miss classis Southern food, and by Southern food I mean fat-laden fried goodness that is completely acceptable in the South. She's going to Cafe Du Monde like 4 times...I might be slightly jealous!
This morning I had pumpkin oats with some more toasted coconut...
In the mix we have:
- 1/3 cup oats
- 2/3 cup water
- 1 banana
- 1 Tbsp cranberries
- 1.5 Tbsp flaked toasted coconut
- 1/3 cup canned pumpkin stirred in at the end
- a hefty sprinkle of cinnamon
I ate that, and now we're getting ready to go shovel the driveway and sidewalk of a lady whose husband broke his leg on the ice yesterday...my parents are the sweetest, most wonderful people in the world for offering to do this for her :) Can't wait to serve, and then go on a 2-3 mile jog (hopefully), do some weights, and maybe some yoga? We'll see!
I'm in charge of dinner tonight, and I'm thinking of something Italian + healthy...nom nom nom!

My husband and I went to New Orleans about a year ago for a couple nights and we had the most wonderful time. It was by far the best vacation ever because of the incredible food. We loved Cafe Du Monde and the Red Fish Grill.
