Planned Ahead!

I'm not usually one to gloat...OK, maybe I am sometimes :)

But seriously, I am glad that Alabama won. I just feel like my allegiance to a school I actually did coursework at and had a connection to is worth more than just cheering for a team in the Big 12. Plus, in all honesty, they were just the better team last night!

So, I was a total and complete slacker and didn't make treats...I have been in a constant state of kitchen-cleaning for the entire week, and didn't have any clean pans or measuring cups, and by the time the dishwasher was done cleaning them, it was about 11pm. Too late to make 2 pans of treats! Guess that just means I'll have to double up next week, eh?

Breakfast this morning was pumpkin yogurt with apple and hazelnuts!

In the mix: 1 cup SF plain fat-free yogurt, 1/3 cup pumpkin, lots of cinnamon, a whole honeycrisp apple, and about 1/4 cup of hazelnuts that I "candied". Basically I just toasted them in a pan with about 2 tsp of brown sugar and 1/2 tsp of water until the mixture started to resemble caramel. Just let it cool on a plate sprayed with nonstick!

It was a yummy breakfast, but definitely more than I thought it would make...the apple REALLY bulked it up. Also, I would probably reduce the amount of brown sugar to 1 tsp since the hazelnuts were almost too sugary.

We stopped by Starbucks on the way to work and got a Grande coffee with probably 2 tsp of half and half:

Today I have really tried to plan ahead food-wise. We are leaving at 4, and therefore not taking a lunch break, PLUS we're having dinner around 8 or so at Copper. I really wanted to plan it so that we could make it to Copper Mountain without having to stop and get unhealthy snacks. That being said, I brought the leftovers from our beef stew (about 1 cup or so per person), the Larabars I bought yesterday, and a mix to make banana oatmeal in the microwave using Tina's suggestion on Carrots N Cake. I'll take pictures for sure, but I'm excited to have taken the time to plan - I feel much more confident about our trip now that I know I can eat healthfully!

I'm so excited to go skiing this weekend! I'll definitely miss the puppers, but it's going to be fun to spend the night and then ski all day tomorrow. I think we're planning on having a good dinner too, so I'll DEFINITELY be posting pictures from that!

  1. You are totally stocked up!!! Love lara bars. They are so delish. I could pound about six of them (and that's being modest.) And by the way, you don't want to ski with me--I've gone three times since eight grade and I only hit the bunny slope. Not kidding. HAve a great weekend!
