DOH!

Hope you all had a wonderful night last night! I know Nate and I had a lot of fun cooking together and snuggling on the couch to celebrate our 3 year anniversary!

We got home last night after an hour of driving in the snow! It was so thick we could hardly see 2 cars ahead of us! I'm hoping the mountains are getting dumped on as much as we are, that'll make some GREAT skiing on Saturday!

We started with a glass each of this wine:

I'm not a huge wine fan, and from what I've tasted thus far, I'm not a big WHITE wine fan, but this was pretty good! It tasted like pineapple, and we wanted to try more of this winery's options ever since Nate got a bottle from a great guy he does business with :)

First we did the sugared pecans so there would be time for them to harden while we cooked the rest of the food:

I did about 1/3 cup of mixed white + brown sugar, 1 tsp of water, and 1 cup of shelled pecans (courtesy of my mom and dad!). I just stirred frequently until the sugar was dissolved and you could faintly smell the pecans. I poured them onto a piece of foil sprayed with non-stick spray to cool.

Next we made bruschetta! We toasted some bread in the oven while Nate chopped 1 HUGE hothouse tomato, minced 4 small cloves of garlic, and mixed it with 1 tsp olive oil, 1 tsp balsamic vinegar, 1 Tbsp dried basil (because guess who forgot the fresh stuff at the store...oops), and 1 Tbsp of parmesan cheese. I had a pretty plate with the bread all fanned out and nice, but we dug in and didn't remember to take a picture til it was too late!



While we ate the bruschetta, we made roasted asparagus by cutting off the tough ends, drizzling with 1 Tbsp olive oil, sprinkled with salt + pepper, and roasting them at 400 for 20 minutes, turning halfway through the cooking time. We finished them with a squeeze of lemon juice and a sprinkling of roasted garlic that we bought in Lubbock!


AND NOW>>> the STEAK

Drizzled 4 thin steaks with 1 tsp olive oil, salt + pepper, and seared them for 2 minutes on each side. When the asparagus was done, I turned up the broiler and broiled them for about 2 minutes with some super creamy gorgonzola cheese:

Mine and Nate's plates...yes, we had white wine with steak. Rules are really just guidelines, eh?

And THEN I remembered! the pecans! go on the steak! It was a great texture and flavor combo with all of the salty meat and cheese and the sweet pecans...mmmmmmm :) I'm a happy girl!

Guess what? I totally forgot to announce this yesterday, but it was Bunker's birthday too! He turned 3 (born on our wedding day...how could he be anyone else's sweet puppy?) We forgot a toy for him, so we fed him the fat we cut off of our steaks:




I think he was probably pretty stoked about it, don't you?

Dessert was some store-bougth (from Whole Foods) canoli with pistachios:

We settled in to watch Law & Order: SVU (one of our FAVORITE shows), and ended up just snuggling and falling asleep. Very fun and very relaxing, AND we'll still be able to celebrate this weekend skiing!

So, after we had that amazing meal, we were so stoked to have leftovers for lunch today! Except.....I forgot that I left them all in a bag on the counter while we walked out the door. DOH! (hence the title of this post). At least we were able to enjoy it last night :)
